Banana Coconut Pancakes - Gluten FreeI am extremely excited to try today’s recipe myself. It looks sooo delicious. If you love pancakes but on a Gluten Free Diet, this recipe using Coconut Flour as an alternative is soon to be your best friend 😉

Banana Coconut Pancakes – Gluten Free

Ingredients

  • 3 Eggs (60g each)
  • 1 Banana (med size)
  • 1 Tsp Organic Honey
  • 2 Tablespoons Coconut Flour
  • 1/2 cup Blueberries
  • Coconut Oil/Olive Oil
  • Optional: 1 tsp cinnamon
  • Metal flipper

Instructions

Whisk 3 eggs in a large bowl.
Mix in mashed banana (there will be small chunks but thats ok), add Honey
Whisk in Coconut Flour and optional cinnamon, add in half the Blueberries and gently combine
Let sit for about 5 -10 minutes. This allows the coconut flour to thicken the batter

Heat fry pan with oil to Medium/High Heat
Spoon 1 – 1 1/2 dessert spoonfuls of batter into pan
Cook on the first side for about 2-3 minutes depending on the heat level. They will begin to bubble at about 2 minutes but don\’t get impatient and flip them

When you can slide the flipper underneath without the pancakes falling apart and they have a nice golden color they are ready to be turned

Top with remainder of blueberries, Maple Syrup, Organic Honey, Fruit, or your favorite topping, enjoy!
